I've attempted lemon meringue pie once before in my life. I'd made a great looking pie, but was unaware that meringue and hot humid days aren't friends. I put the pie in a box to take it to work, and put it in the passenger seat of my car, with the window down in an effort to keep the fluffy, white top from sweating so much. Going 65 on I-75, the meringue flew off the top of the pie, out the window and I saw it splat on the breakdown lane. Everyone enjoyed plain, lemon pie just as much.
The upside down lemon meringue pie looks just as good as a traditional one, and I think I even liked it better. I didn't finish it off with the whipped cream topping, because that felt like too much. Also, this entire pie needs to be consumed in 24 hours, so I was afraid the whipped cream would deflate in the fridge. My husband Ryan loved it because it's so light. It was a great dessert for after our dinner of Speedy, silky Mac and cheese (a later post.)
edit: this pie was still delicious 4 days later, and the meringue crust held up
